Potato Splashes

While bits of potato are scattered in all directions in this collision, some is left over near the point of impact.  This material is sharply defined, not blurred, which means it must be traveling at slower speeds than the crown of potato fragments around it.  This area might be akin to the slowly-moving rebound column that forms during liquid splashes.
